Thank you for purchasing the Perlage Commercial Pressurizer, Basic Model. This is the latest version of our commercial pressurizer. The Commercial Pressurizer Basic Model is interoperable with all of our products, including the Perlage Champagne Preservation System, the Perlini Classic Cocktail Carbonating System, and the Perlini Express Carbonating System. Please read and follow these instructions for setup and use.
Setup
The Commercial Pressurizer Basic Model consists of a compact regulator with a durable solid brass body, preset to the proper carbonation pressure for all of our products, and a coiled hose that attaches to the filling gun. The regulator has a standard CGA-320 fitting, designed to attach to CO₂ tanks in the U.S.

Insert tank seal. Press the white plastic tank seal (provided) into the hex nut until it seats against the face of the regulator stem, which in turn seats against the face of the nozzle on the tank valve.

Attach regulator. This regulator requires an adjustable wrench large enough to fit the 1-1/8" hex nut on the stem. Thread the hex nut onto the main valve of the tank, and tighten the nut firmly.

Test for leaks. To test, briefly open and close the main valve on the tank. Listen for leaks. If there are no leaks, open the valve and continue.
Use
The Commercial Pressurizer Basic Model is interoperable with all of our products, including the Perlage Champagne Preservation System, the Perlini Classic Cocktail Carbonating System, and the Perlini Express Carbonating System. All of our products, by design, use the same carbonation pressure, so you can confidently use this pressurizer with all of our products.

Pressurize. Make sure the main tank valve on the CO2 tank is open. Press the black conical rubber tip of the filling gun into the conical depression in the cap of your product (either the Perlage bottle enclosure, or the Perlini Classic shaker, or the Perlini Express shaker). Depress the lever of the gun, and pressurize the vessel until you can no longer hear gas flowing. Depending on the volume of liquid in the container, this will generally take about five seconds.

Carbonate or store. If you are using the Perlage System, you can now simply put the enclosures back in your refrigerator, and your sparkling wine will keep for days, weeks, or even months. If you are using the Perlini Classic or Perlini Express carbonators, shake the vessel vigorously for about five seconds to disolve the CO2 in the beverage.

Open and enjoy. Remove the cap slowly and enjoy.

We recommend shutting off the main valve of the CO₂ tank when not using your Perlini Express. This prevents micro leaks or inadvertent trigger presses from prematurely draining the tank.

Never point the pressurizer gun at anyone and discharge CO₂. Pressurized gas can damage the eyes and ears.
