Carbonated ingredients from soda water to champagne are ubiquitous not only in cocktails, but in the greater beverage world as well. As our industry is largely self-educated, many bartenders don't have an understanding of the underlying chemistry of carbonated ingredients. Although this is by no means necessary to make great drinks, having an understanding of how carbonation changes flavor, how to carbonate liquids, and what diminishes carbonation can greatly benefit bartenders.

This seminar is intended for a trade audience, and not for an audience with a scientific background, and covers the following topics in a casual and approachable way:

  • The physics of carbonation including Henry's Law and the effects of temperature on gas solubility

  • The chemistry of dissolved CO2, including it's effects on acidity, and other solutes effects on CO2 saturation

  • Nucleation sites, how they can reduce carbonation, and how they can be used to improve flavor, appearance, and aroma

  •  Best practices for using carbonated ingredients in cocktails

  • How to carbonate liquids, and best practices for carbonating and bottling liquids

  • Review and demonstration of existing beverage carbonation products including counter pressure bottle filling
