Restaurants and bars can use Perlage in two ways. You can leave the bottle in the enclosure when you serve their guests, and make the Perlage technology part of the interaction with your guests. Showing off the Perlage enclosure demonstrates to your customers that you are using revolutionary technology to give them the best possible product, and it involves your guests in the conversation. Or, if you are a more traditional restaurant, you can make Perlage invisible, and remove the bottle from the enclosure before you serve it with a white linen napkin draped over your forearm. Either way--whether you're nouveau or traditionnelle--your guests get a perfect glass of Champagne every time.

The Perlage Commercial system with multiple enclosures is the ultimate tool to lift your by-the-glass program to the next level.
The Commercial Pressurizer is typically attached to a stand-alone CO2 tank (supplied by the customer). Common CO2 tank sizes are 5lb or 10lb, which are small enough to fit easily behind the bar, and will last many months under typical use.
The Commercial Pressurizer may also be spliced into an existing CO2 source in the bar, typically to the high-pressure hose of the carbonator unit of a bag-in-box soda gun system. If you intend to splice the pressurizer into a soda gun system, you must also purchase the Splice-in Adaptor Kit, SKU 400210.
